SOUTH BEACH, FLA- (March 19, 2013) – Dilido Beach Club, an ocean front restaurant and lounge located in The Ritz-Carlton, South Beach, announces the hiring of Chef Andres Meraz as Chef de Cuisine. Born and raised by Mexican parents in the San Francisco Bay area, Meraz recalls being the sous chef in his family’s kitchen since the time he was old enough to walk. At the age of 12, he began working in his grandfather’s Mexican restaurant, where he quickly realized his passion for the culinary arts.
Upon graduating high school, he enrolled in the California Culinary Academy, which led him to the kitchen of the celebrated Carnelian Room. In 2007, Meraz joined the culinary team at The Ritz-Carlton, Half Moon Bay under the tutelage of French Master Chef Xavier Salomon. Following impressive apprenticeships in kitchens at The Ritz-Carlton, Key Biscayne and The Ritz-Carlton, San Francisco, his ambition to immerse himself culturally in the cooking techniques of diverse food regions took him to San Sebastian, Spain. There, he honed the skill of preparing and cooking Basque cuisine, and mastered the science of Molecular Gastronomy during the time he spent cooking alongside Chef Pedro Subijana, of world-renowned, Three Michelin Star Restaurante Akelarre.
In 2012, Meraz was invited to open the now critically-acclaimed J&G Grill restaurant in Bal Harbour, which was inspired by international star Chef Jean George Vongerichten.
Equipped with an extensive culinary background, Chef Meraz is eager to infuse his style and passion for cuisine to an already unique and exceptional dining experience. Guests can expect a revamped menu reflective of ocean to table dishes, all incorporating local ingredients.
